El Pinto Restaurant in Albuquerque brings notoriety to the Girl Scout cookie selling season with a specialty Girl Scout cookie Levante. Levante is El Pinto's signature desert built with multiple decadent layers of rich Italian mascarpone cheese, and for a limited time Girl Scout cookies.

El Pinto's signature Levante is a New Mexican twist on taramisu, using iconic New Mexican biscochitos made at El Pinto, for the layers providing levitation to the whipped Italian mascarpone cheese. The homemade biscochitos are soaked with Patron XO Cafe, Kahlua, brandy, and coffee, before being layered with mascarpone cheese and topped with shaved chocolate. The Girl Scout Cookie Levante will use a selection of cookies and be constructed in an alcohol free version that maintains the rich decadence customers indulge in while enjoying Levante.

A well known component of Girl Scouting is the Cookie Program, the largest girl-run business in the world. Once a year, Girl Scouts around the country venture into the entrepreneurial world to learn business and financial skills and earn money to fund their Girl Scouting goals. Through “learning by earning,” Girl Scouting aims to empower girls.

This year the Girl Scouts of New Mexico Trails are hosting a Girl Scout Cookie Challenge at the Sheraton Uptown on Sunday, February 9th, 2014 from 2:00 p.m. until 5:00 p.m. El Pinto Restaurant and Cantina will be revealing its Girl Scout Levante and have samples for tasting.
