Alfafa sprouts are one of the richest and most complete foods. They contain a complete range of vitamins and mineral salts (Ca, Mg, K, Fe, Zn, Cu, S, Na) as well as a very high level of protein (35%). They also contain all of the essential amino acids and eight enzymes essential for good digestion. They are a wonderful topper to any salad, or use instead of lettuce next to a sandwich.

Sprouting Alfalfa is very easy. For a harvest of a good handful of alfalfa sprouts, put 2 tablespoons of seeds in a jam jar or a sprouter. Cover with plenty of spring water and leave to soak for half a day.

Next, place a piece of muslin over the mouth of the jar to act as a filter, secure with an elastic band and rinse and drain.

Several times a day, rinse the seeds by pouring spring water through the muslin then emptying it out to leave a moist atmosphere. Turn the jar and lay it flat so that the moist seeds stick to the sides.

To start with on the first day, put the jar in a place with not much light. On the second day transfer it to a light spot (natural light) but away from direct sunlight to allow the shoots to go green. Choose a spot where the seeds can be viewed easily and pour a little water into the jar, rinse and drain at least 2 to 5 times a day.

If the sprouting seeds look cramped in the jar, spread them out on a radish plate (a plate with little holes in it) or a wide, non-metallic sieve and cover with a glass lid making sure that enough air is circulating around the edge to keep the atmosphere moist.
