BODY of Santa Fe announces the availability of its handmade truffles and raw, vegan and organic collection of holiday chocolates for the 2012 season.

Made in BODY's own kitchen, owner Lorin Parrish custom designs recipes for two types of chocolate: raw/vegan/organic and truffles. The raw chocolate is made from cacao beans from a single-family farm in Venezuela and remains unheated while the truffles are made with wild crafted dark or milk chocolate and all organic ingredients.

Both types are examples of how healthy chocolate can be when it's produced with high quality cacao and other organic products, something that is reinforced by the simplicity of the list of ingredients found in BODY's chocolates. The raw chocolates contain only raw cacao, raw cacao butter, raw cacao paste, raw coconut oil and Yacon root syrup while the truffles are made with four ingredients: cacao, cream, milk and raw sugar. In addition, the chocolates can be flavored with an infusion of such flavors as lavender, ginger, chili pepper and more.

“People love to indulge and give sweet gifts during the holidays, but there is a way to do both in a way that is truly healthy,” said Lorin. “Chocolate is often created from cacao beans from multiple sources and over processed, so it loses its health benefits. At BODY we aim to create special holiday treats that nourish.”

The much-touted nutritional benefits of raw cacao range from reducing cataracts to improving heart function to alleviating stress. The theobromine naturally found in raw cacao is a mild, non-addictive stimulant that some believe can treat depression. Raw cacao is higher in free radical fighting antioxidant flavanoids, sulfur and magnesium—more so than fruit, tea or wine. The essential fatty acids found in chocolate may help the body to raise good cholesterol and lower bad cholesterol.
